Michael Holtzman
Michael received his BS in Restaurant Management from California Polytechnic University in Pomona, California and now has over 31 years of restaurant industry experience. In 1991, he formed Profitable Food Facilities (PFF) and has since worked with more than 360 restaurants, clubs, water parks, golf courses, resorts and sportsplexes, coaching and directing with a focus on improving sales, quality, and profitability of food service operations.
PFF is recognized world wide as Mike will be speaking in 2012, for the 4th year in a row, at the Asian Golf Conference in China. He is the only speaker discussing the topic of maximizing food service sales and profits. Other invitational speaking engagements include the following organizations: Athletic Business Conference; Bodylife Conference (United Kingdom); CMAA; International Health Racquet & Sports Association; National Golf Course Owners Association; National Ski Area Association; PGA of America; Professional Golfer's Career College; Sportsplex Operators & Developers Association; World Waterpark Association.
The next big venture is the completion of the project in Dubai. PFF is designing the Greg Norman clubhouse kitchen for the first 131,000 square foot clubhouse. He was also hired to assist in the opening of all 5 restaurants, including Jaime Olivers new Italian concept. Earth and Fire will be the two golf courses completed in the next 24 months at an estimated 1.2 billion dollars. These facilities will continue to host the New Race to Dubai Classic, which is similar to the FedEx Cup in the states. The last tournament of the year has a payout of 2 million dollars to the winner and an additional 5 million to the points leader.
Kenny Handler
Kenny is a senior consultant and a partner in Profitable Food Facilities.
Kenny Handler has operated and managed California's finest Waterparks for the past 18 years. His road has taken him from the training supervisor for Raging Water, San Jose to the original Park Supervisor of Six Flags Hurricane Harbor.
During the past decade, he excelled as the General Manager of the Wave Waterpark and received acknowledgments through the World Waterpark Association winning countless awards on marketing and programing. His experience, creativity, and strong work ethic have been the foundation for successful consulting and management in municipalities and the entertainment industry.
Scott Steele
Scott Steele is a Regional Manager of Backyard Grille, our sister company. Scott has devoted his entire career to the restaurant industry. After working with Disney resorts, he started working with large companies like The Cheesecake Factory in openings of new restaurants and staff training all over the country. He was then hired to assist a single owned restaurant to take the operations from the ground up and make it a success.
With this background, he is ready and focused on helping to bring Profitable Food Facilities clients to the next level in customer service, operations and financial success. Scott's passion and devotion to his job truly sets him apart from many others in his field. He is always ready to jump into any situation and "get his hands dirty", our clients consider him one of the family because of his efforts. Scott recently led the team on Paradise Golf and Country and Oceans 11 casino projects. His 15 years of direct front line restaurant experience fits perfectly with the goals of PFF.
Bob Mark
Bob is a senior consultant and a partner in Profitable Food Facilities.
After completing his college degree, Bob began his thirty year career of restaurant management knowledge tied to fast food, casual dining and white tablecloth operations. Assignments have included multi-unit supervision, operations director and management trainer for a division of 42 operations.
He has directly overseen the launch of 40+ food facilities from design to opening and is practiced in the areas of vendor and supplier negotiations, equipment and fixtures design, and the forecasting and analysis of budgets and costs.Bob's "low key" approach has produced some phenomenal results which you can read about in the "consulting" portion of this web site.
George J. Hasa
George is a senior consultant and a partner in Profitable Food Facilities.
Born and raised in Europe, George amassed 34 years in food service industry, thirty of it in the U.S. Through this time, George was involved in operations varying from private dining room for a live stage theater company, fine dining, steak house concept, salad bar and buffet concept, exhibition bakery and bakery cafes to ballpark and airport kiosks. The annual food sales volume of the operations ranged from $200,000 to $3,500,000 per location and total volume managed to $70,000,000.
The responsibilities varied from a Manager, District Manager, Director and Vice President of Operations to President of an advertising coop managing a 10 million dollar annual advertising budget.
